2010 Dec. On the Boardwalk, Intercontinental 

With the theme of  “Christmas Around the World” and a selection of dishes from The Intercontinental Kitchen-- a compilation of the best recipes from the company’s chefs and more than 6000 culinary experts--the amazing, award-winning Intercontinental San Juan Resort & Casino hosted our December Dinner Christmas Party on Thursday, Dec. 9, 2010.


It was a Christmas event in all of its tropical splendor on the boardwalk and under the stars. Skalleagues and their guests were greeted with Veuve de Vernay French sparkling brut rose and a selection of wines that flowed throughout the evening. Just for starters we had a amazing Braised Duck with Plum Sauce served in a mushroom cap -- a dish that originated at the Intercontinental Hong Kong, and Foie Gras with Mango, a mouth-watering local version of a recipe originally made with raisins and grapes in Prague. The appetizers spanned  countries and continents with tastes of France, Costa Rica, Saudi Arabia, Panama, Chile and the USA.


A hot Arabian Cream of Eggplant soup was interestingly paired with a cold Egyptian Lentil Soup. This was followed by a trio of hot and cold tidbits from Kenya, United Arab Emirates and Singapore (Seafood Kway Tiao-- a hot and spicy mix of scallops, squid and prawns).


The entrees were a smooth Mushroom Risotto from Italy and tender, braised  Lamb Kabash, as served at the Intercontinental Taif in Saudi Arabia.


Dessert? All the good things that are part of Christmas in Puerto Rico, topped with fine cordials, liqueurs and cognac.


Congratulations go to all our Skalleagues at the Intercontinental San Juan, their magicians in the kitchen, and the attentive staff for serving such an astoundingly sophisticated repertoire!
